Preheat the oven to 180°C / 356°F.
Roll out one sheet of the phyllo pastry on a countertop.
Brush the surface generously with butter. (Note: Leave some butter for later.)
Cut the sheet into 4 squares or rectangles (depending on the size).
Place the thyme on the edge of each square (see step-by-step pictures).
Fold the edge about 2 cm / ¾ " and brush with some butter.
Crumble some goat cheese along the opposite edge.
Sprinkle a little honey right next to the cheese.
Start rolling the pastry on the cheese side, towards the thyme, until they look like a cigar.
Place on a baking paper covered baking tray.
Brush with the remaining butter.
Bake for about 15 minutes, until crispy and golden brown.
NOTE: Phyllo pastry tends to dry out very quickly. Therefore it needs to be stored in an airtight package, if you won't use all of it right away. Be careful when brushing, as the pastry sheets rip easily.
