Ingredients
  

EASY GLUTEN FREE PIE CRUST

  • 1 cup sweet rice flour
  • 1 cup all purpose flour gluten free
  • ½ cup cold vegan butter Earth Balance soy free
  • ¼ – ½ cup cold water

LAVENDER DATE GOAT CHEESE PIES

  • 7 large dates pitted
  • 3-4 tablespoons water
  • 4 ounces vegan! goat cheese
  • tablespoons culinary lavender

Instructions
 

EASY GLUTEN FREE PIE CRUST

  • Using forks or a dough cutter, combine flours and butter.
  • Add water one tablespoon at a time until a dough ball forms.
  • Knead and form a ball, wrap and refrigerate for 20 minutes. Roll on a floured surface and cut into shapes for single hand pies or form a pie crust.

LAVENDER DATE GOAT CHEESE PIES

  • Preheat oven to 350 °F.
  • In saucepan over medium heat, combine dates and water. Stir/mash until dates melt into a paste and absorb water. Remove from heat and allow to cool a bit.
  • To cooled dates, add goat cheese and lavender. Combine completely.
  • To make hand pies, or Pi: Spoon filling onto crust, leaving room at the edges. Top with another Pi shape, pinch edges to seal.
  • Bake at 350 °F for 14-18 minutes, or until when crust is lightly brown.
